Tuffy Stone will join The Jacksonville Firefighters Union, Bearded Pig, Sugar Fire and Southern Soul throughout the weekend for a showcase of food for purchase as well as demonstrations and lessons on Friday. The five pitmasters will rotate through the weekend to allow fans to enjoy pulled pork, spare ribs, beef brisket, chicken and other slow-cooked delicacies.

TUFFY STONE

A Six-time World Barbecue Champion pitmaster, a Barbecue Hall of Fame inductee, an author (Cool Smoke -The Art of Great Barbecue), a former Marine, a French-trained chef, and an occasional reality television star. Dubbed “The Professor,” his legendary precision and obsession with the science of smoke have made him one of the most influential people in barbecue.  As a result of his continued success with the Cool Smoke competition barbecue team and his extensive knowledge of all things barbecue, Stone was selected to join Destination America’s show ‘BBQ Pitmasters’ as a judge and co-host.

Sugarfire takes the best traditions of the best barbecue cities in the U.S.A. to create a St. Louis style barbecue that’s all its own. Charlie Downs and chef Mike Johnson founded Sugarfire Smoke House in 2012 in St. Louis and expanded to Jacksonville in 2021. Sugarfire’s award-winning barbeque tantalizes taste buds with baby back ribs, juicy pulled pork, and some of the best beef brisket in town. Chef Mike Johnson has studied with Myron Mixon, cooked under Emeril Lagasse and Charlie Trotter, and has overseen the creation of six other restaurants.

The Bearded Pig is a Southern BBQ Joint and Beer Garden with its original location on the Southbank of the St. Johns River in the San Marco neighborhood of Jacksonville. Drawing on influences from Texas, where beef is king and all the meat is dry-rubbed, all the while not forgetting to pay homage to the Carolina’s where pork rules.  All five of their sauces are proprietary recipes and are sure to add the perfect flavor to the meal.  In addition, their Southern-inspired starters and side items are the perfect match to their perfectly smoked meats.

Wild West 31 BBQ team is a group of Firefighters from Jacksonville Fire Rescue’s Station 31 located off 103rd St. on the westside of town. They have a passion for high-quality BBQ and feeding their fellow firefighters on a weekly basis. For the past several years, Wild West 31 has enjoyed competing as a team and learning as much as possible about competitive BBQ. They are proud to represent and be sponsored by their union, Local 122 Jacksonville Association of Firefighters.

Smoke is usually a good thing for BBQ restaurants, but in 2010, when Harrison Sapp saw the restaurant that he had converted from a gas station in nearby St. Simon’s Island go up in flames, he thought it was the end of his shop. PGA TOUR player and St. Simon’s resident Davis Love III was one of many on the island who helped Southern Soul rebound to now thrive in the BBQ community. Southern Soul, a self-described Southeast Coastal Georgia Smoke Joint, has all the BBQ dishes you would expect while bringing their award-winning version of Brunswick Stew, the Barbecuban sandwich and the ‘Sup Dawg hot dog to their menu as well.
